Flour Bakery's Famous Banana Bread

I love banana bread, especially ones that are crusty yet moist in the middle.  There's nothing like it.  

I saw this recipe online and apparently Chef Chang of Flour Bakery in Boston is famous for her banana bread so I thought it was worth trying.  I had some leftover batter so I made some mini muffins.  Don't they look scrumptious?  :)




Flour Bakery's Famous Banana Bread

Ingredients
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup plus 2 tablespoons sugar
2 eggs
1/2 cup oil
3 1/2 bananas, very ripe, mashed
2 tablespoons creme fraiche or sour cream
1 teaspoon vanilla extract
2/3 cup walnuts, toasted and chopped


Set oven to 350 degrees F. Line the bottom of a loaf pan with parchment paper.

Beat sugar and eggs with a whisk until light and fluffy, about 10 minutes.  Yes, 10 minutes.  Stick with it folks, it will pay off.



Drizzle in oil. Add mashed bananas, creme fraiche, and vanilla. 


Sift together the flour, baking soda, cinnamon and salt. 


Fold in dry ingredients. 


Fold in the nuts.



Pour into a lined loaf pan and bake for about 45 minutes to 1 hour.

    Thanks for sharing this recipe with me! Not sure if Andrew told you I baked it last week, but I did and it turned out well! I'm going to try it again tonight with the hope it'll come out a little more crunchy/crusty on the top...like it looks in your pics!

  2. Hi Susan, I'm so glad you tried the recipe, isn't it so good? This is my go to banana bread recipe now, I can never go back. :) I hope your second batch came out more crispy. I wonder if you could move it up to a higher rack the last 10 minutes of baking. I have the opposite problem, mine kind of ends up burning a little on the edges. They are still yummy though. Hope to see you soon!

  3. Thanks for the suggestion! The second time was more crunchy, but still super moist in the center. I'm about to make another bread tonight, but going for carrot. I have tons of carrots thanks to Costco! I just came across a carrot/banana bread recipe, but I'm going to use your recipe with the addition of some carrots. I'll let you know how it turns out.   4. Oooh, that sounds yummy. I just bought a whole bunch of carrots too so I can juice them, but maybe I'll save some for some bread too. :) We were over at your place last week to watch the season finale of the bachelor! We missed you, but fear not the new season of the bachelorette is coming up. lol.
